One of my favorite toddler dinners is Mini Meatloaf Cups.

Mini Meatloaf is prepared the same way as regular meatloaf except instead of putting the mixture in a meatloaf pan, you place it in a foil cups in a cupcake/muffin pan.

I like to use the larger 6 cup muffin pan.

You can use any meatloaf recipe, but here is one of our favorites. Makes 6 cups.

INGREDIENTS

  • 1/4 cup and 2 tablespoons ketchup
  • 1 tablespoon and 1-1/2 teaspoons brown sugar
  • 3/4 teaspoon prepared mustard
  • 2-1/4 teaspoons Worcestershire sauce
  • 3/4 teaspoon salt
  • 1 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1 egg
  • 2-1/4 teaspoons milk
  • 1/8 teaspoon ground black pepper
  • 1 cup and 2 tablespoons bread crumbs or crackers
  • 1-1/4 pounds ground beef

DIRECTIONS

  1. In a large bowl, combine the ketchup, brown sugar and mustard and mix well. Remove 3 tablespoons of this mixture and reserve for later for the tops of the meatloaf. To the mixture in the bowl, add the Worcestershire sauce, salt, onion, garlic, egg, milk and ground black pepper and mix together well.
  2. Stir in the bread crumbs and let stand for 5 minutes. Add the ground beef, mixing well. Spoon the mixture into the cupcake pan.
  3. Bake at 350 degrees F for 40 minutes. Brush on reserved ketchup mixture and bake for 10 more minutes.
