For the longest time I would only get this when we went out because I really didn’t know how to make it. Come to find out this is one of the most inexpensive and simplest recipes to make!

Here is my recipe for yummy chicken & dumplings that both your toddler and the rest of the family will love!

Homemade Chicken & Dumplings

Ingredients:

1 Whole Chicken (cooked)

Baby Carrots - cut up

1 Refrigerated can of biscuits

Salt & Pepper (to taste)

Directions:

I use the leftovers of 1 large rotisserie chicken. We eat some of the chicken the night before, then I remove the chicken from the bones and refrigerate, keeping the bones.

The next day I boil the chicken bones with some cut up baby carrots and a little salt and pepper.

I boil for about 30 minutes until I have my chicken stock. Remove and throw away bones.

Add leftover chicken (shredded) into pot.

Take 1 can of refrigerated biscuits (I use the small can of 10) and separate biscuit dough into pieces, 3-4 per biscuit. Gently drop 1 by 1 into the pot.

The biscuits will become your dumplings and will puff up, and then go back down. Put burner on a simmer and stir every so often.

Within about 20 minutes your broth will begin to thicken. Add a teaspoon or 2 of wheat flour if you like your sauce a little thicker.

Cut up chicken and dumplings to bite size pieces for your toddler.

Serve & Enjoy!

If using a pre-made frozen pizza like we did, you will need:

1. Frozen pizza with pepperonis (other toppings optional, we also had sausage on ours)

2. 1 small can sliced black olives

If you are building your own pizza you, you will need:

1. 1 (12 inch) fully baked pizza crust

2. 1/2 cup pizza sauce

3. 8 oz shredded mozzarella cheese

4. 1 small package pepperoni slices OR 8 mini meatballs cut in half

5. 1 small can sliced black olives

-If using a frozen pizza have your little one place 2 black olive slices on each piece of pepperoni.

-If making your own pizza, have your toddler assemble the pizza by spreading pizza sauce and cheese over crust. If using pepperoni place 2 black olive slices on each piece. If using meatballs, slice meatballs in half and place 1 sliced black olive on to each one and arrange in pairs to resemble eyes.

Bake and enjoy your creation together!

One of my favorite toddler gadgets for making eating frozen treats less messy is the Dripstik.
This little plastic holder fits popsicles sticks in one end, and ice cream cones in the other. This allows any “drips” to land in the surrounding container instead of all over your little ones hands or on the floor.

Its seems like every child wants the crusts removed from his or her sandwich. Every child also finds a way to smear jelly on every household surface, and to argue that someone else got a bigger piece. These clever cutters speed up the process of removing the crust, cut sandwiches into even portions and even seal the edges so the jelly, cheese or mustard won’t seep out the sides (and down the child’s leg and onto the carpet…).

I originally bought one that cut the sandwich diagonally, but yesterday I
found one that cuts into quarters. There is even a heart-shaped one! Clean-up is
easy, too - I just wipe it down or pop it into the top-rack of the dishwasher. A
great time saving gadget that was invented by a mom.

Mini Meatloaf is prepared the same way as regular meatloaf except instead of putting the mixture in a meatloaf pan, you place it in a foil cups in a cupcake/muffin pan.

I like to use the larger 6 cup muffin pan.

You can use any meatloaf recipe, but here is one of our favorites. Makes 6 cups.

INGREDIENTS

1/4 cup and 2 tablespoons ketchup

1 tablespoon and 1-1/2 teaspoons brown sugar

3/4 teaspoon prepared mustard

2-1/4 teaspoons Worcestershire sauce

3/4 teaspoon salt

1 teaspoon onion powder

1/8 teaspoon garlic powder

1 egg

2-1/4 teaspoons milk

1/8 teaspoon ground black pepper

1 cup and 2 tablespoons bread crumbs or crackers

1-1/4 pounds ground beef

DIRECTIONS

In a large bowl, combine the ketchup, brown sugar and mustard and mix well. Remove 3 tablespoons of this mixture and reserve for later for the tops of the meatloaf. To the mixture in the bowl, add the Worcestershire sauce, salt, onion, garlic, egg, milk and ground black pepper and mix together well.

Stir in the bread crumbs and let stand for 5 minutes. Add the ground beef, mixing well. Spoon the mixture into the cupcake pan.

Bake at 350 degrees F for 40 minutes. Brush on reserved ketchup mixture and bake for 10 more minutes.
